Parainema was bred for resilience — disease resistance, specifically, which is an increasingly serious concern in Central American growing regions. What the breeders also produced, perhaps incidentally, is a varietal with real sweetness and a structured acidity that holds up well under unconventional processing. This lot from Sabio puts that to the test.

After harvest, ripe cherries are selected, floated to remove defects, then sealed into a stainless-steel bioreactor for three days of carbonic maceration fermentation. Temperature, pH, and brix are monitored throughout. It's a controlled environment designed to deepen sweetness and complexity without the unpredictability of an open fermentation. After that, the cherries dry slowly on raised beds for 35 days, then rest for 14 weeks in parchment before hulling — a long stabilisation period that lets the profile settle and deepen before the coffee moves anywhere.

The result is a cup that earns the word complex without hiding behind it. Dark chocolate and rum-soaked raisin sit at the centre, warm spice runs underneath, and orange peel lifts the finish cleanly. Heavy but not muddy. The fermentation adds depth; the extended rest adds composure.

Sabio operates farm to export — they grow, process, and ship directly, which means the traceability on this lot is unusually clean. They also work with smaller producers across Jinotega and Matagalpa, bringing the same processing infrastructure and quality controls to farms that wouldn't otherwise have access to it. That's worth knowing about the coffee you're buying.

Roasted for filter. Pourover or Aeropress recommended. If you want to run it through espresso, pull it long and give it a few days off-roast first — it has enough body to handle it.
