This filter-roasted Parainema from Sabio is a bold yet refined expression of Nicaraguan coffee, showcasing how innovative fermentation can deliver depth and warmth without sacrificing clarity.
Grown across the highlands of Jinotega and Matagalpa at 1,200–1,450 masl, this lot is made from Parainema, a variety prized for its resilience, sweetness and structured acidity. Careful farm management and ideal growing conditions allow the variety’s rich, rounded character to shine.
Immediately after harvest, only ripe cherries are selected and floated to remove defects before being sealed inside a stainless-steel bioreactor for carbonic maceration fermentation. With the mossto recirculating, fermentation continues for three days, while pH, temperature and brix levels are closely monitored to ensure precision and consistency. This controlled environment enhances sweetness and complexity while maintaining balance.
After fermentation, cherries are dried slowly on raised beds for 35 days, encouraging even moisture reduction and flavour development. The coffee is then reposed for 14 weeks prior to hulling, allowing the profile to stabilise and deepen. Both dry parchment and green coffee are stored in Ecotact bags, preserving quality and freshness throughout the supply chain.
Roasted specifically for filter brewing, this coffee delivers a rich, warming cup with layered sweetness and a rounded mouthfeel. Expect deep notes of dark chocolate and rum-soaked raisins, complemented by warm baking spice and a lift of orange peel that brings structure and balance to the finish. The result is a comforting yet complex filter coffee with impressive depth and a long, gently spiced aftertaste.
