A vibrant, wine-processed Ethiopian with lifted sweetness, bright fruit and a silky finish. Juicy, elegant and full of character — a standout example of Guji at its best.

Sweet, juicy notes of cranberry and raspberry, followed by delicate elderflower and a smooth honey finish.

Wine-process coffee is all about controlled, oxygen-free fermentation — and this lot shows the clarity and sweetness that approach can unlock. Fully ripe cherries are hand-selected, sealed in stainless-steel tanks and left to ferment as CO₂ builds and pushes the juicy mucilage flavours deep into the seed.

Fermentation runs for 4–5 days, kept below 25°C to preserve bright, clean fruit. Once complete, the cherries shift from deep red to yellow before drying slowly for 15–18 days on raised African beds.

Produced with the support of Tracon, this lot also contributes to farmer-focused initiatives, including education programs designed to create long-term opportunities for families across the community.
